01 Mar Raw Chocolate Covered Figs
I came across a luscious tray of fresh figs today and couldn’t wait to bring them home and start to experiment. Figs are mineral-rich and nutrient dense. Having only previously used dried figs, I was excited about digging in to these fresh figs. The rind on these figs is a little dense, so if you wish to eat them “as is”, you may wish to peel off the rind first, or have a look at this helpful tutorial.
I thought these would pair nicely with some raw, dark chocolate. Raw cacao is perhaps the most magnesium-rich food on the planet, and when coupled with raw figs, you end up with a nutrient and mineral-dense treat that is truly delicious! Because the figs are fresh, these are a little gooey at room temperature. My team preferred these “semi-frozen” – only sitting out a short while from the freezer. Raw Chocolate Covered Figs Fresh figs, rind peeled, and cut into bite-size chunks Raw Chocolate Coating 3 tablespoons raw cacao butter – grated Melt cacao butter and coconut oil. (Be careful not to overheat as we want to maintain the nutrients, so just gently warm until melted.) Blend in maple syrup and cacao powder until smooth. Dip chunks of fig into chocolate mixture and place on parchment-lined tray. Place tray in freezer until firm. Store in fridge or freezer. |
