21 Jun Lime Tamari Quinoa Salad
Quinoa is one of those things that I frequently forget about, only to rediscover and wonder why I hadn’t been including it more frequently. It’s so versatile and nutrient-dense, and it makes a terrific base for bowls and salads. Some factors to consider about quinoa, and why you may wish to include it in your diet more frequently:
- High in protein
- Gluten-free
- Fibre-rich
- Immune supporting flavonoids
- Antioxidant-rich – great for heart health
- Magnesium-, iron- and potassium-rich
Because it has such a neutral taste, it can pair with just about anything. In the recipe below, I simply used veggies that I had on hand. You could easily swap out any of the ingredients. I will often make a double or triple batch of quinoa so that I have some on hand for quick and nutritious meals.
As for the dressing, I elected to make an oil-free, citrus-based dressing.
Citrus Quinoa Salad
4 cups cooked quinoa (I used my instant pot using these directions)
2 cups trimmed and sliced sugar snap peas
1 red pepper – cored and cut into bite-size pieces
1 carrot – peeled and sliced into matchsticks
1/2 cup slow roasted cherry tomatoes
4 green onions – chopped
fresh herbs of choice (I used a combination of parsley and basil)
Tamari Lime Dressing
3 tablespoons fresh lime juice
2 tablespoons Tamari
1 tablespoon honey
2 teaspoons minced garlic
1 teaspoon minced ginger
1/8 teaspoon cayenne pepper
Combine salad ingredients in serving bowl and add dressing to taste. It’s nice to allow the flavours to intensify for a few hours before serving.
