03 Mar Cauliflower Rice with Garlic Scapes, Cilantro and Lime
I’ve been having great fun in the kitchen experimenting with new recipes. Sometimes, my motivation stems from a desire to create new and interesting ways to incorporate healthy foods/herbs/superfoods into tasty and accessible dishes. Sometimes, my motivation comes from standing in front of the fridge or pantry and simply trying to create something with whatever I happen to have on hand. Recently, I’ve had the pleasure of having another fun way to get creative: I’ve been receiving weekly deliveries of organic produce which have given me added motivation to put a fresh new spin on seasonal goods.
I happen to know that many of us who have signed up for Organics Live deliveries may receive cauliflower this week 😉
I also know that quite a few subscribers and yogis follow plant-based and even Paleo diets. Cauliflower is a fantastic alternative to rice. Pulsed in your food processor, you’d be hard pressed to tell the difference between white rice and cauliflower. This provides a wonderful platform, as the neutral taste of cauliflower lends itself well to so many flavours. I also wanted to embrace the offerings of our own Orillia Farmers market and stopped by to visit the friendly folks of McBride’s organic farm. They supplied me with luscious garlic scapes and cilantro. I couldn’t wait to get home and start to experiment!
The end result was a creamy, almost risotto-like, dish that had even my less adventurous eaters reaching for a second helping. It doesn’t hurt that it’s chock-a-block full of anti-oxidants, anti-inflammatory agents, minerals, vitamins and enzymes to boot!
Cauliflower Rice with Garlic Scapes, Cilantro and Lime
I large head of cauliflower
2 cups diced garlic scapes
1 – 2 tablespoons coconut oil
1 can full-fat coconut milk
1 clove garlic – minced
1/2 cup chopped cilantro
2 tablespoons fresh lime juice
1 tablespoon good quality medium curry (I like Kurundu)
1 teaspoon turmeric powder
1 teaspoon good sea salt
Wash and cut cauliflower into florets. In batches, pulse in food processor until it resembles rice. Steam cauliflower rice for about 8 minutes or until tender. Meanwhile, sauté garlic scapes and minced garlic in coconut oil. Once softened, add curry, turmeric and salt. Add steamed cauliflower, cilantro, lime juice and coconut milk. Combine well and enjoy!
