27 Feb Kind Cereal
I really enjoy this dense, nutritious cereal. The healthy fats and fibre really help to keep you feeling full and satisfied for hours.
This particular combination of ingredients is exceptionally heart and brain healthy. We are still recovering collectively from the botched “fat free” experiment that we were all drawn into. Fats are not evil. We need fats, especially plant-based fats to keep our brain, heart, and nervous system happy and healthy. Fats also play an important role in helping us feel full or satiated.
The bulk of the work for this breakfast happens the night before. This is great not only for saving time, but for one less decision to make first thing in the morning. For me, I really love waking up knowing that breakfast is planned. It always feels like I start off the day in the right direction.
This recipe calls for soaking the nuts, seeds, and buckwheat groats overnight. The reason for this is to make everything less acidic and easier to digest.
I really enjoy the combination of apple contrasted with the tangy, tart Golden berries. This recipe really covers it all. Vitamins, minerals, omega-3 fats, fiber, antioxidants, protein, phytonutrients…phew!
This will make enough for 2 or 3
1/4 cup raw pumpkin seeds
1/4 cup buckwheat groats
1/4 cup hemp hearts
1/4 cup Golden Berries
1 apple – diced
1 teaspoon cinnamon
1 tablespoon shredded coconut
Sweetener of choice – we love McCutcheon’s Maple Syrup and Dickey Bee Honey
Nut milk to taste – optional
Soak nuts, seeds, and groats overnight. Rinse well and add remaining ingredients. Drizzle with maple syrup or raw honey to taste. Top with milk or nut milk if desired.
