18 Feb Raw cacao hemp coconut macaroons
Did you know that magnesium deficiency is one of the most common mineral deficiencies to have? Did you know that magnesium plays a very important role in the development and maintenance of bones and teeth? It’s also important for proper muscle function, and can help facilitate sleep. Magnesium has also been shown to be helpful for managing migraines. This list is by no means comprehensive, yet it’s still pretty impressive. While it can be difficult to get enough magnesium in your regular diet, there are two magnesium-rich foods that you may like to consider….especially as it’s wrapped up in a yummy treat!
Raw (not processed) cacao and raw hemp seeds are incredibly nutrient-dense foods which have an impressive amount of magnesium. They are the featured ingredients in this week’s recipe which also managed to satiate my sweet tooth (no easy task).
These are quick to make, but be sure to store them in the fridge, as they will melt and get rather messy if left at room temperature. Here you go…and you’re welcome.
Raw Cacao Hemp Coconut Macaroons
1/2 cup hemp hearts (I used High on Health Hemp)
1/2 cup large flake oatmeal (use gluten-free if needed, I used Bob’s Red Mill)
2 cups coconut flakes (I used Bob’s Red Mill)
1/2 teaspoon Himalayan salt (use 1/4 teaspoon for a less “sweet & salty” taste)
3 heaping tablespoons of raw cacao (I used Giddy Yoyo)
1/3 cup raw honey
1/2 cup coconut oil – gently warmed to liquid
2 teaspoons vanilla
In large bowl combine dry ingredients. Add liquid honey to gently warmed coconut oil and mix with vanilla. Pour over dry ingredients and combine well. Drop spoonfuls on parchment-lined baking tray. Freeze for 15 minutes. Store in fridge. These are nice and chewy when given a few minutes to warm from fridge….but don’t wait too long or things could get messy. 🙂
