06 Mar Walnut Peanut Butter Balls
I love dates. I have been known, when the sweet tooth strikes, to smear dates with peanut butter. (Oh, I just realized, I’m talking about the dates that grow on trees; not, you know, when someone asks you out. Sorry for the confusion.)
This past Thursday afternoon, I wanted to make a walnut-based energy ball. I thought pairing it with dates and peanut butter would make a yummy combination. I also love to seek out opportunities to add chia and hemp seeds as they increase both the protein and omega-3 fat content. All good.
These can be made from start to finish in less than 10 minutes. No baking required.
Walnut Peanut Butter Balls
1 cup raw walnuts
1 cup pitted dates
1/4 cup natural peanut butter
1/4 teaspoon sea salt
1 tablespoon hemp seeds
1 tablespoon chia seeds
Combine everything in a food processor and pulse until well combined. Roll into bite-sized balls or press into pan for making bars. Store in fridge or freezer.
